VEGANUARY: WEEK 1

I won't go on about how amazing plants are for our health. When you start getting comments like "please tell me what skincare you use" and "you're looking so well, have you been on holiday?" and your clothes fit a little looser, you know you're onto a good thing.

I've taken on Veganuary for lots of reasons. One, I have committed to complete one challenge each month this year. January's challenge is to go vegan. It's something that makes me feel good about myself, about my health, my body and I know I'm doing my small part to help the planet.

So let's kick off with my meal plan for week 1.

 Veganuary has forced me to learn how to cook vegetables in so many different ways. It is so far from restrictive!

Veganuary has forced me to learn how to cook vegetables in so many different ways. It is so far from restrictive!

Has it been difficult? No, honestly it's easier than you'd think. I don't feel restricted or like I'm missing out on anything. Have I cheated? Yes. Twice so far. The first was a cup of tea made on cows milk first thing in the morning. I got to the last sip before realising what I'd done. The second was similar, I ate a colleagues home made goats cheese and later remembered... Woops, thank god it tasted amazing!

Along with the above plan, I'm aiming for 1.5L of water each day and getting 8 hours of sleep a night. I'm very excited to see my before and afters side by side!
